The Friday 5 šļø: New Quinoa Salad, Wedding Photos & More!
Lots of fun things to share this week...
Happy Friday!
Weāve made it to mid-Febrary, which in my book means itās pretty much spring. ;)
Today, I have a new recipe video, wedding photos, a new food classification system to share, and moreā¦
Hereās this weekās Friday 5 š
1. Meal Prepping
I just hit publish on this high-protein, high-fiber quinoa salad video āthis is one of my favorite salads to mix things up when Iām in a recipe funk.
Add some shredded chicken to boost the protein even more, and you have a vibrant, healthy dish to keep you full and energized.

2. Reminiscing
I (finally) finished the blog post with all our wedding photos; it was so much fun to remember the day! We had tons of great photos to choose from, so I spent time picking which ones to share on the blog for the longer version. I also just published a short Reel if you prefer the shorter version:
3. Writing
About the Nova Food Classification System.
Have you heard of the NOVA Food Classification System?
The NOVA food classification system is a way to categorize foods based on the extent and purpose of their processing. This system was developed by a team of nutrition and health experts as a tool to evaluate food processing and its impact on public health. It is a fantastic tool to help us make healthier food choices.
I like this system because it simplifies healthy eating without extreme dieting. Itās a non-restrictive approach for people who value both health and food.
4. Taking
As a health coach deeply invested in natural health solutions, Iāve always been on the lookout for new ways to support my gut health and overall health and wellbeing.
ARMRA Colostrum has been a game-changer for me. I was skeptical, but now I think Iāll take it forever!
Iāve been taking the flavorless powder for over 4 months now, and I can say itās significantly improved my digestion and decreased bloating. And something very unexpected happenedāI grew a ton of new hair, too. (I scored blog readers a code, use ELIZABETHRIDER10 for 10% off!).
Iāve always had pretty thick hair, but itās definitely gotten thinner as Iāve gotten older (I donāt mind, aging is a gift!). I take a multi and fish oil, and while I definitely did not have a hair-loss problem, I noticed after a few months on ARMRA that I have new hair growth all over my scalpāmy hair stylist even noticed. Iāve also noticed a glow to my skin and fewer fine lines. Iām taking it for the gut health aspect, but Iāll always take the hair and skin boosts, too! ;)
5. Reading
You Could Make This Place Beautiful by Maggie Smith
This book is a breathtakingly honest and beautifully written memoir that resonates deeply with me.
Maggie Smith (the American poet, not the British Dame who plays Professor McGonagall!) has a way of capturing complex emotions with simplicity and grace. She writes about finding her way back to herself after (in her view) an abrupt ending to her marriage. Married, coupled, single, or otherwise, I think all people can see a part of themself in this book, being confronted with unexpected change at some point in life. Iām a huge fan of her work, and I highly recommend this book.
Iām looking for my next great fiction read, too; if youāve read anything great recently, let me know in the comments!
Have a wonderful weekend!
Elizabeth
Enjoy your recipes very much. Beautiful picture of you are your husband. God bless you both.
For a. Fiction read try āThe Womenā by Kristin Hannah. It starts in 1966 and the main character is a young nurse who joins the army and goes to Vietnam. It was just released this month. Iām about half way through and am really enjoying it.
