Spring Veggie Frittata + Amazing Almond Flour Cookies 🍪
Plus the case for dill 🌿, a new home preview & brunch reminders 🌸
Happy Friday!
Spring is springing. I’ve been cooking up a storm and have fantastic new recipes for you this week, plus a fun home update…
Shaved Asparagus & Leek Frittata Recipe
I just published my new favorite healthy high-protein recipe, which also happens to make a fabulous brunch recipe or make-ahead meal prep recipe.
I love dill and use it liberally as a garnish, but if you’re like Gwyneth Paltrow and don’t like dill (???!!!??!), basil would also be great here. (But really, who doesn’t like dill?! I am flabbergasted. Dill for life!)
And here’s the video:
Perfect Almond Flour Cookies (5 Ingredients)
I also just shared my recipe for Perfect Almond Flour Cookies, which, to be honest, I totally forgot and couldn’t believe I’ve never posted. I’ve been using this recipe for years as a base recipe to make a healthier, higher-protein, lower-carb cookie.
They are great plain, or you can add frosting or decorate them with sugar to fit any occasion. You can also add chocolate chips or dip them in chocolate. The world is your oyster! cookie!
For Easter, I’d sprinkle them with pastel decorator’s sugar from Whole Foods (they use a natural dye) for a fun brunch statement.

A Fun Home Update
I also shared a home preview this week. Two years after starting this renovation/rebuild, everything is finally coming together, and I’m loving it.
Transforming this space was a massive project, and M & I are thrilled to be able to relax and enjoy it finally.
We’re still searching for art and final touches, but it feels so good to be at home.
Happy Almost April! Wishing you a wonderful weekend,
Elizabeth
I am happy you are home. I love the space. It looks very calming.
I have followed you for years! I have your book too….love your recipes & common sense approach to life!
Thank you
