Friday šļø: Meal Prep Lunch + Home Photos
My Go-To High Protein, High Fiber Lunch, Plus The Coziest PJs & Thoughts on My Current Era
Hi Friends!
Itās finally February, which means weāre that much closer to spring. Spring is my favorite because I get to plant my garden (why spend $10 on tomatoes when I can spend $20 trying to grow my ownāLOL). For now, letās enjoy everything this month has to offer.
Today, Iām sharing my current favorite meal prep lunch, Tuna Chickpea Salad, the best jammies (40% off!), and ideas to make life better this week.
1. Eating
Iām excited about this lunch, and Iām also excited that I got this detailed video down to just over 3 minutes.
Youāll love this recipe because itās easy to adapt. Make it plant-based by using 2 cans of chickpeas instead of tuna. Or, omit the chickpeas and go all tuna. Or, add another can of tuna. Make it your own! This is a base recipe to help you meal prep nutrient-dense lunches all week long.

I also posted Classic Pesto Spaghetti this week because itās on heavy rotation in my kitchen. It's one of my fave easy dinners.
Wearing
Iāve been wearing these Cozy Earth jammies so much that I reached out and asked for a code for my email list (ELIZABETHRIDER40 - they brought back the holiday special!), and you can use it on any Cozy Earth product.
Cozy Earth uses a proprietary bamboo viscose material thatās all-natural and SO soft. Iāve replaced all of our towels and bed linens with their products, and now Iām onto the jammies :) The towels are honestly the softest, most absorbent towels Iāve ever owned. Neither M nor I will ever go back.
I bought a cheaper, similar pair of jammies last year; they lasted about 6 months before looking dingy and pilling. I still have my Cozy Earth jogger set from 4 years ago, and it looks new.
This highlights the current era Iām in, the feeling of wanting to curate instead of collect.
I find myself drawn more to the idea of buying fewer things and making sure theyāre of high quality and made to last. It isn't just about liking nicer things; it's about making a choice to step off the endless merry-go-round of buying and donating or throwing away. I want to cherish longevity over momentary gratification.
If you want to check them out, use code ELIZABETHRIDER40 for 40% off the entire Cozy Earth website through Feb 14th.
3. Reading
I just finished reading Forever Strong: A New, Science-Based Strategy for Aging Well by Dr. Gabrielle Lyon, and I highly recommend it to all people who want to maintain health and vitality, especially women. The short of it is that we need more high-quality protein because itās essential to maintain muscle mass as we age (and really, at any age!).
She argues that we donāt have a body-fat problem; we have a lack-of-muscle problem. Itās a great read. I recommend it.
4. Watching
Season 2 of The Lincoln Lawyer on Netflix. Itās great!
I loved Season 1, and Season 2 is just as good. Itās your standard mystery plot that only this one particular lawyer can solve. Itās engaging and a good entertainment.
5. Loving
Speaking of curating, itās been an oddly soothing process to curate our house. I just added this rug and love it. The coffee table is on the way (a big Italian stone piece that is part art, part coffee table!), and we need to hang a new big round mirror above the fireplace (the current mirror is too small) and source more art.
Weāve waited on many finishes because the house needed touchups. Iām moving into the decorating phase and doing my best to make it intentional. I want to take time to find art and collect pieces that speak to the character of the home and the people in it. Thereās something cathartic about setting up a home with your significant other, one that really shows the life you're building together.
(The rug is Tufenkian, I think it has to be ordered through a designer so I donāt have a link. I worked with Laura McCroskey to find this one. Highly recommend her.)
Happy Friday!
