When I’m craving something fresh, crunchy, and “Fall-ish,” this Fall Cabbage Crunch Salad with Maple Dijon Vinaigrette is my answer!
This is a great salad when you want to be healthy but also want to eat something delicious.
Kale and cabbage on their own can be kind of… how should I say 🤔… blah.
BUT, massaging the kale (I know, annoying, but it really does help), then chopping them small (texture is everything!), and adding a sweet Maple Dijon dressing really makes them enjoyable.
